A-Little-Less-Guilt Christmas Bark

I know everyone worries about putting on those extra holiday pounds…it’s at least lingering in the back of your mind.  Well, I hope this combination of goodness helps ease that worry.  Dried cherries…good for you!  Pistacios…good for you!  Dark chocolate…um, yes…good for you!  Dark chocolate is high in viatmines and minerals, full of antioxidants, contains theobromine (which helps harden tooth enamel), helps control blood sugar and is good for your hart and brain for many reasons, but enough with the science lesson.  On to the recipe!



– 10 oz of dark chocolate chips
– 1 1/4 c dried cherries
(a 5 oz bag is a little less, but it will work)
– 1 1/4 c pistachios
– parchment paper
– 8×8 pan


MELT:  Melt chocolate, either in the microwave (make sure to stir regularly!) or in a heat safe bowl over a pot of boiling water (also stir regularly).  I chose the bowl-over-hot-water method.  I feel like the chocolate is more workable this way, but I could totally be imagining things.

ADD:  Measure out 1 cup of pistachios and 1 cup of dried cherries.  Chop up the pistachios and cherries just enough to break up the whole pieces.  Add both pistachios and cherries to the melted chocolate and fold them in.  I added the pistachios first and mixed them in, then the cherries, but you can do them both at the same time.  Pour mixture into parchment paper lined pan, spread evenly and lightly tap on counter to release any air bubbles.

TOP:  Finely chop the remaining cherries and 1/4 cup pistachios and sprinkle on top.  Use a piece of parchment (or the overhang of the piece that is in the pan) to press the toppings down into the chocolate, so they don’t fall off when you take a bite.  Place in the fridge until chocolate is set.


OR MAYBE THIS:  Double the recipe and use a 9×13 pan to have enough to give as gifts or share with your guests at your holiday party!
